Tropical Shrimp and Avocado Mango Salsa

A delicious infusion for the taste buds to take you through the balmy summer evenings or whenever you’d like to bring a little summer your way. Shellfish are ample sources of omega 3 fatty acids, iron and zinc while shrimp are high in vitamin B12 and selenium. Paired with pineapple for a sweet and salty flavor profile, this dish will also aid digestion and fight against inflammation with the bromelain content found within the pineapple.

Ingredients

Shrimp and pineapple skewers
1 lb shrimp
1 pineapple, cut in chunks
Juice of 2 limes
Sea salt and pepper
2 tsp ground coriander
2 tbsp coconut oil

Avocado mango salsa
1 mango peeled and finely diced
1 avocado peeled and finely diced
1 small red onion, finely diced
1 jalapeño pepper, seeded and diced
2 tbsp freshly chopped cilantro
1 tbsp freshly squeezed lime juice
2 tbsp extra virgin olive oil
¼ tsp salt

Method

Shrimp and pineapple skewers
Preheat the grill
Toss shrimp in the mixture of sea salt and black pepper, coriander and coconut oil
Thread the shrimp onto skewers and grill for 4 minutes on each side.
Next, thread the pineapple onto the skewers and grill for 2 minutes on each side.
Remove from heat and drizzle both the shrimp and pineapple with lime juice. Serve with the avocado salsa on the side.
